• 4 large carrots (about 500–600 g)
• 1 tbsp honey
• 1 tbsp whole-grain mustard
• 1 tbsp soy sauce
• 1 tbsp olive oil
• 1 clove garlic (finely minced)
• ¹⁄₂ tsp smoked paprika
• black pepper, to taste

For the sauce:

• 4 tbsp hick natural yogurt or sour cream
• 1-2 tsp lemon juice
• pinch of salt

Instructions

1. Peel the carrots and cut them lengthwise into thick slices (about 1 cm).

2. Boil for 5–7 minutes in salted water until slightly tender but not overcooked.

3. Mix honey, mustard, soy sauce, olive oil, garlic, paprika, and pepper.

4. Place the carrots on a baking tray lined with parchment paper and coat both sides with the glaze.

5. Roast at 200°C (390°F) for 20–25 minutes until golden and caramelized.

6. For the sauce, mix the yogurt with lemon juice and salt.

7. Serve hot with the sauce and fresh herbs.

Note

For a richer flavor, turn on the grill function for the last 3–5 minutes of roasting.
