• 45 g oatmeal
• 240 ml vegetable or chicken broth (or water + spices)
• 1 tsp olive oil
• 30 g fresh spinach
• 50 g mushrooms (sliced)
• 1 small green onion (finely chopped)
• 1 egg
• 1.5 g salt
• 0.5 g black pepper
• 0.2 g smoked paprika or chili (optional)
• 7 g grated Parmesan cheese (optional)

Instructions

1. In a medium saucepan, heat the olive oil over medium heat. Add the mushrooms and sauté for 3–4 minutes until golden.

2. Add the oatmeal and toast for 1 minute, stirring constantly.

3. Pour in the broth, add salt and pepper. Cook for 8–10 minutes until the oatmeal is soft and creamy.

4. 2 minutes before the oatmeal is ready, add the spinach and green onion. Stir to combine.

Cooking the egg:

1. Poached: cook the egg for 3–4 minutes in boiling water.

2. Fried: fry in a pan with a little oil to your desired doneness.

3. Serve the oatmeal in a bowl, top with the egg, sprinkle with grated Parmesan and a pinch of paprika.
