Fermented Pumpkin with Apples

Ферментований (квашений) гарбуз з яблуками

Fermented Pumpkin with Apples — a Fall Cold Appetizer for Healthy Digestion

Fermenting vegetables is one of the oldest and most beneficial ways to preserve food, and it is making a comeback in modern cooking. Fermented pumpkin with apples is a simple yet functional dish that combines seasonal ingredients, natural flavor, and potential health benefits.

Pumpkin is traditionally associated with roasting, soups, and sweet dishes, but fermentation gives it a completely different character. During natural fermentation, vegetables retain their fiber and develop a pleasantly tangy flavor without the addition of vinegar. The apples in this appetizer are not only important for flavor — they also support the fermentation process and add a fresh, fruity note.

Fermented pumpkin with apples can be a great choice for those following a healthy eating lifestyle. It is a light cold appetizer that can be enjoyed as part of a balanced diet. With a simple ingredient list and no added sugar or preservatives, it can easily become part of an everyday menu.

Another advantage of this appetizer is its versatility. It can be served on its own, alongside main dishes, or added to bowls and salads. It pairs especially well with grains, roasted vegetables, and even simple whole-grain toast.

Fermentation is also a great way to enjoy pumpkin beyond its usual season without freezing or complicated preserving methods. After a few days, simple seasonal ingredients develop a deeper, tangy flavor. That is why fermented pumpkin with apples is worth trying if you are looking for a natural and interesting addition to your homemade meals.

Description

Натуральна холодна закуска з ферментованого гарбуза та яблук без оцту й цукру. Легкий кисло-солодкий смак, хрумка текстура та користь для травлення.

Ingredients
  • 300 g pumpkin (peeled and cut into cubes)
  • 1 apple (sweet and tart, about 150 g, sliced)
  • 6 g salt (1 level tsp)
  • 250 ml filtered cold water
  • 1 garlic clove (optional)
  • 3 black peppercorns
  • Optional for serving:
  • fresh herbs (parsley or dill)
  • a few drops of olive oil
Step-by-step preparation
    Prepare the ingredients:
  1. 1

Peel the pumpkin, remove the seeds, and cut it into small cubes.

  2. 2

Wash the apple and cut it into thin slices. You can leave the peel on.

  3. Prepare the brine:
  4. 3

Dissolve the salt in cold water until completely dissolved.

  5. Fermentation:
  6. 4

Layer the pumpkin and apple slices in a clean glass jar.

  7. 5

Add the garlic and black peppercorns.

  8. 6

Pour in the brine, making sure all the ingredients are completely submerged.

  9. 7

Cover the jar with a lid without tightening it fully, or cover it with cheesecloth.

  10. 8

Leave at room temperature for 2–3 days.

  11. Check for doneness:
  12. 9

Once the pumpkin develops a pleasant tangy flavor and a mild fermented aroma, transfer the jar to the refrigerator.

  13. Serving:
  14. 10

Place the fermented pumpkin and apples on a serving plate.

  15. 11

Add a little olive oil and garnish with fresh herbs, if desired.

  16. 12

    Serve as a cold appetizer.

Note

If you prefer a milder flavor and crisp texture, start tasting after 2 days of fermentation. For a more pronounced tanginess, leave it for 3 days, then transfer it to the refrigerator as soon as it reaches your preferred flavor.
