Instructions
Add the dry yeast and sugar to the warm milk. Stir well and let it sit for about 10 minutes until the yeast activates.
Add the egg, melted butter, salt, and flour. Mix until a soft dough forms.
Cover the dough with a towel and let it rise in a warm place for about 30 minutes.
Meanwhile, prepare the filling. In a bowl, combine the cottage cheese, honey, egg yolk, vanilla sugar, and raisins. Mix until smooth.
Divide the dough into 4–5 small balls.
Make a small indentation in each ball and place a spoonful of the cottage cheese filling inside.
Arrange the mandryky on a baking tray lined with parchment paper.
Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, until golden brown.
Before serving, sprinkle with powdered sugar or drizzle with honey if desired.
Note
For extra soft mandryky, use fresh cottage cheese and avoid overbaking.
If the cottage cheese is dry, add 1–2 tablespoons of sour cream to the filling. This will make it smoother and more creamy.
