Ukrainian Mandryky with Cottage Cheese — A Traditional Pastry Perfect for Easter

Ukrainian cuisine is rich in traditional recipes that have been passed down from generation to generation. Some of these dishes remain widely known today, while others are slowly disappearing from modern kitchens. One such hidden gem is mandryky with cottage cheese — soft, delicate pastries that were once very popular in Western Ukraine.

The name mandryky comes from the Ukrainian word meaning "to travel." According to old traditions, these pastries were often taken on long journeys, to markets, or on family trips. Thanks to their nutritious cottage cheese filling, mandryky stayed fresh for a long time and provided lasting energy. This made them a practical and beloved snack in many regions.

Mandryky can be described as small buns or open-faced pastries filled with sweet cottage cheese. Their main feature is a soft yeast dough combined with a fragrant, creamy filling. In different parts of Ukraine, the recipe could vary slightly. Some families added raisins for sweetness, while others included honey or vanilla to give the pastries a festive flavor.

Today, mandryky can easily be adapted to modern kitchens. They are perfect for breakfast, afternoon tea, or family gatherings. These pastries look especially beautiful on an Easter table, where alongside traditional paska, many families enjoy serving additional homemade treats that feel warm and comforting.

Another reason for the growing popularity of mandryky is their simplicity. The ingredients are basic and affordable — flour, milk, eggs, and cottage cheese. Despite this simplicity, the result is wonderfully aromatic and satisfying. The golden crust, soft dough, and creamy filling create a balance of textures that appeals to both adults and children.

Traditional recipes always carry a special sense of nostalgia. They remind us of family traditions, warm kitchen moments, and the comforting smell of freshly baked pastries. That is why dishes like cottage cheese mandryky are slowly returning to modern home kitchens and becoming a beautiful addition to contemporary holiday tables.

  • 1 egg
  • 30 g butter, melted
  • 1.5 tbsp sugar
  • 4 g dry yeast
  • a pinch of salt
  • For the Filling:
  • 180 g cottage cheese
  • 1 tbsp honey
  • 1 egg yolk
  • 20 g raisins
  • 1/2 tsp vanilla sugar (or vanilla extract)
Instructions
  1. 1

Add the dry yeast and sugar to the warm milk. Stir well and let it sit for about 10 minutes until the yeast activates.

  2. 2

Add the egg, melted butter, salt, and flour. Mix until a soft dough forms.

  3. 3

Cover the dough with a towel and let it rise in a warm place for about 30 minutes.

  4. 4

Meanwhile, prepare the filling. In a bowl, combine the cottage cheese, honey, egg yolk, vanilla sugar, and raisins. Mix until smooth.

  5. 5

Divide the dough into 4–5 small balls.

  6. 6

Make a small indentation in each ball and place a spoonful of the cottage cheese filling inside.

  7. 7

Arrange the mandryky on a baking tray lined with parchment paper.

  8. 8

Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, until golden brown.

  9. 9

Before serving, sprinkle with powdered sugar or drizzle with honey if desired.

Note

For extra soft mandryky, use fresh cottage cheese and avoid overbaking.
If the cottage cheese is dry, add 1–2 tablespoons of sour cream to the filling. This will make it smoother and more creamy.
