• 60 g butter (softened)
• 300 ml milk
• 2 eggs
• 200 g sugar
• ¹⁄₂ tsp baking soda
• 100 g almonds (chopped)
• 100 g candied fruits
• 4 tbsp lemon juice
• ¹⁄₂ zest of lemon
• a pinch of vanilla (or vanilla sugar)

Instructions

1. In a large bowl, cream the softened butter with egg yolks and sugar until light and fluffy.

2. Gradually add lemon juice, a few drops at a time, while continuing to mix the butter mixture.

3. Add flour, milk, vanilla, lemon zest, chopped almonds, and candied fruits. Mix until the batter becomes smooth and well combined.

4. In a separate bowl, beat the egg whites with baking soda until stiff peaks form.

5. Gently fold the whipped egg whites into the batter until all ingredients are combined.
